• 3 C. Sifted flour

• 1 t. Baking Soda

• 1 t. Cinnamon

• 2 C. Sugar

• 1 t. Salt

• 1 1/2 C. Oil

• 1 C (or 8oz) crushed pineapple with the juice

• 1/2 t. Vanilla

• 3 eggs - beaten

• 2 C. Diced bananas

• 1 C. Chopped nuts (optional)

1. Mix oil, pineapple, vanilla, eggs, and bananas.

2. Sift all dry ingredients into a bowl.

3. Stir in dry ingredients and mix well.

4. Grease pan and dust with four.

5. Bake at 350 for 1 hour and 20 minutes.

6. Let cool before removing.

7. Go around edge of pan with knife to loosen before removing.

• Tried using bundt pan. Cake rose too much. Looked funny on bottom when turning upside down.

• Tried glaze. Try on regular cake, and not bundt. Try filling in crevice with glaze?

• I let cool overnight. Worked fine for getting out next morn.
