Rum Balls 


Ingredients:

 

  • 3 C. Finely crushed vanilla wafers. (1 11 oz. box)

  • 2 C. Powdered Sugar

  • 1 C. Finely chopped pecans or walnuts.

  • 1/4 C. of Cocoa

  • 1/2 C. Bourbon or other

  • 1/4 C. Light corn syrup

Directions:

 

  1. Crush wafers preferably with a food processor. Very hard to crush fine by hand!

  2. Combine wafers, powder sugar, pecans, and cocoa.

  3. Stir in alcohol and corn syrup.

  4. Shape into 1 inch balls.

  5. Roll in powdered sugar.

  6. Store in fridge for 3 days prior to serving.

Notes:

 

  • Let mixture set 20-30 minutes before rolling in to balls. It will stiffen up for you.

  • Do not stack when storing. They will flatten out.

  • Some dried out when in fridge, but created a crust shell. Actually was good that way!

  • This recipe made about 36 balls.

  • Probably will only make these for parties or gifts. Found you just don't sit around eating these for breakfast!

  • Here are the ones I have made and the note on them.

Gentleman Jack - Ok, couldn't taste the Jack too much. might try regular jack next time.

Cabo Tequila - These were good. Would make again. Little strong, but hey, it's tequila. (wabo balls)

Rum - Surprisingly, these were one of the better ones. Good flavor. Make again.

Vanilla Rum - Ok, couldn't taste the vanilla rum though. Skip.

Godiva Chocolate Liqueur - Really good choc flavor. not over powering with the taste of alcohol. would make again.

Jim Beam - Ok, nothing too special. Skip.

Need to try Jim Beam Black label. Also try Grand Mariner liqueur.
