Randy's Sugar Cookies 

(a mix of moms and other recipes)


Ingredients:

 

  • 1 1/4 C. Sugar

  • 1 C. Butter flavored Crisco, butter, or margarine.

  • 1 Eggs

  • 1/4 C light corn syrup. or Pancake syrup.

  • 1 t.. Vanilla

  • 2 C. All purpose flour.

  • 2 t. Baking powder.

  • 1/2 t. Baking soda

  • 1/2 t. Salt.

Directions:

 

  1. Heat oven to 350.

  2. Combine: sugar, butter. Beat at medium speed until well blended.

  3. Add eggs, vanilla. Beat until fluffy.

  4. Combine: Flour, baking powder, and salt.

  5. Add to mix at low speed.

  6. Divide dough into 2 quarters.

  7. If dough is to soft or sticky, wrap in plastic and place in fridge for 1 hour.

  8. Spread 1 T. of flour on large surface.  Flatten dough.

  9. Roll to 1/4" thickness.

  10. Cut out cookies and place on cookie sheet.

  11. Bake at 350 for 10-15 minutes.

Notes:

 

  • Can try 375 degrees for 5-9 minutes.

  • I rolled to 1/4". Might make a little bit thicker for a thicker cookie.

  • Good idea to put in fridge. I had problems sticking, even with flour.

  • After cutting, I pressed some into cinn. sugar, then put on baking sheet. worked good. These came out like snickerdoodles.

  • 2 pans in at the same time didn't work too well. One got done faster. Would have to watch continuously. Maybe try convection.

  • Used parchment paper on cookie sheet. worked really well instead of greasing pan.

  • Might try even thinner icing. Maybe even dipping cookie face into icing instead of spreading.

  • I did a 375 bake at 9-10 min. maybe use a minute less. Mine came out hard. But after leaving in the covered cake pan for another day the softened up just right? 

  • Icing 4 dz cookies took me 3 hours to make and ice.

  • Buy blk coloring paste.

  • If you use piping bag, icing (color) will spread after it sits a day. Use very little. It will triple in size after sitting.

  • Need multiple bags if doing a bunch of cookies.

  • Can freeze if doing a bunch.

  • Look into other decorating items to put on cookies. Special cookie cutters?

  • 1/2 t. Salt.
