Pumpkin Pie With Streusel Topping 


Ingredients:

 

  • 15oz can of pumpkin

  • 14oz can sweetened condensed milk

  • 2 egg yolks

  • 1 t. cinnamon

  • 1/2 t. ginger

  • 1/2 t. nutmeg

  • 1/2 t. salt

  • 2 egg whites

  • 1 pie shell

  •  

  • 2 T. all purpose flour

  • 1/4 C. packed brown sugar

  • 1 t. cinnamon

  • 2 T. butter chilled

  • 1 C. chopped walnuts

 

Directions:

 

  1. Pre heat oven to 425

  2. Mix. pumpkin, sweetened cond. milk, egg yolks.

  3. Stir in cinnamon, ginger, nutmeg, and salt.

  4. In a glass or metal mixing bowl, whip egg whites until soft peaks form.

  5. Gently fold into pumpkin mixture.

  6. Pour into pie shell.

  7. Bake for 15 min. in preheated oven. Meanwhile prepare topping.

  8. Small bowl, combine flour, brown sugar, cinnamon. 

  9. Blend in cold butter with a fork or pastry blender until crumbly.

  10. Mix in chopped nuts.

  11. Sprinkle on top of pie

  12. Reduce heat to 350 and bake for 40 minutes or until set.
